Sour Cream & Onion Breakfast Biscuits




Ingredients

  • 1 small onion diced

  • vegetable oil

  • 2 tsp sugar divided

  • 50 grams cold butter cubed

  • 250 grams all purpose flour

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 200 ml sour cream

Recipe

  1. In a small frying pan, heat 1 tbsp of oil. Add onions, spin pan to spread them evenly and add 1/2 tsp of the sugar and a pinch if salt. continue to cook for 5-7 minutes, continuously stirring. This process will be faster if your onions are diced on the smaller side.

  2. Remove onions to a paper towel lined plate.

  3. In a bowl, combine flour, salt, baking soda, and the rest of the sugar.

  4. Sprinkle the butter cubes over the flour mixture and then use your fingers to "cut" the butter into the flour. See image.

  5. Add sour cream and use a spoon or your hands to incorporate, until a shaggy dough is formed.

  6. Remove dough onto a floured surface and knead 2-3 times until the mixture mostly comes together. Flatten the dough and pour the cooked onions over its surface. Fold the dough in half, Turn clockwise, and then fold again. Repeat this 2 more times and then knead for 2 more minutes or until the dough is elastic.

  7. Flatten the dough and pour the cooked onions over its surface. Fold the dough over itself in half, turn clockwise, and fold again. Repeat this 2 more times and then knead for 2 more minutes or until the dough is elastic. Form an even ball with the dough.

  8. Press the ball down until the dough is about 1 inch thick. Use floured a cookie cutter to form as many rolls as possible.

  9. Use leftover dough to form balls, and flatten them into discs.

  10. Place in the oven for 15 minutes or until the tops are golden.

  11. Coat with butter if you like or slice them in half and enjoy with your favorite breakfast items.
